Jean-Baptiste Troisgros (–) and his wife Marie Badaut (–), lemonade makers of Burgundian origin, ran the Café des négociants in Chalon-sur-Saône in Burgundy.

They had three children: Jean (born 2 December in Chalon-sur-Saône), Pierre (born 3 September in Chalon-sur-Saône)
